Make lemon curd!
I'm still working my way through my 60 lemon harvest.
And I'm loving this new book I bought myself as an early Christmas gift (at Costco). Small Batch Preserving. It has a number of interesting recipes including a very easy one for lemon curd. Sorry to not post the recipe; I try to be careful about copyright. This book is a worthwhile purchase!
This is the third (and fourth) batch I've made but I still wasn't quite sure what to do with lemon curd other than 1. put it in tarts and 2. eat it on toast/scones or 3. give it to my mother in law. I'm not making more tarts, I'm not much into stuff on toast, and my mother in law already has some so....it sat in my fridge.
That is, until a dinnertime emergency last week (no fresh ginger for Chicken Tikka Masala; chicken already thawed) Led me to this Rachel Ray recipe for lemon chicken. It was super easy (not very good for you) and Biscuit loved it!
I am freezing most of this batch of curd for future lemon chicken (or scone) needs. Seven more lemons--used!
There's the leftovers in my fancy new compost bucket complete with (supposedly) compostable bags. I'll keep ya posted on that. The bags do keep things cleaner...


I have a hard time using lemon curd as well. It usually sits in our fridge until we decide it might need to be tossed, or we move ;)

Lemons are really good for deodorizing a smelly garbage disposal, and for cutting into eighths (or slices) to have in your Hefeweizen (which arguably is a Summer-drink).
Noah just got one of his tentacle-arms onto the laptop and erased half my comment. *sigh*

I used to like lemon curd in custard. If you try it and it's awful, please remember that I was about 5 at the time...
