So we made popsicles (aside: why does the typepad spell check hate popsicles? Is there another way to spell it?). Anyway, we made three kinds.
Biscuit created a smoothie popsicle called Strawberry Blast.
Here is her recipe:
- 1/2 banana
- 1/2 cup of strawberries
- 1/2 cup of blackberries
- 1/4 cup of yogurt (for the record she used whole milk, plain yogurt)
Blend, freeze and eat.
Makes two small servings. (for the record it made about 5 small popsicles)
I wanted to try new recipes so I made these chocolate/fudgsicle pops from Smitten Kitchen. The recipe was a bit fussy seeming but they were delicious so I guess it was worth it. I added some chopped marshmallow and chopped, toasted, almonds to a few and that was extra delicious. Rocky road pops for the win!
I also wanted to try a cheesecake popsicle so I started with this recipe and modified it. My version of the recipe for Strawberry Cheesecake Popsicles:
3/4 cup finely chopped, fresh strawberries. Mix with 2 T sugar and set aside.
- 1/2 package (4 oz) cream cheese
- 1/4 cup plain yogurt (could probably use sour cream instead)
- 1/3 cup powdered sugar
- 1/4 cup half and half (or milk?)
- 1/4 tsp vanilla
- 1 tsp lemon juice
Then stir in the strawberry/sugar mix and freeze in mold.
Finally, last week, when I first got popsicles in my head I made these rice pudding pops. I LOVED them but the family detests rice pudding. So I ate them all. And I really, really want to try these key lime pops. I have all the ingredients we just need to eat enough popsicles to free up the molds. Such problems I have. And now I really want to buy the book those recipes are from!
I was going to post my new, modified granola recipe but I'll save that for another day.
